In 2016, I was preparing for retirement after 20 years of service in the U.S. Army. I remember the conversation between my wife and I like it were yesterday. She suggested I look into culinary school as food has always had a special place in my life; my mother and grandmother taught me how to cook at a young age. Initially, I fought the idea of cooking and told my wife I was not interested. A few days later, I replayed the discussion in my head and decided to walk into a local university to inquire about their culinary program. While there, I sat in on a class being taught by a Chef about Sous Vide. I was hypnotized by the cookery method and the words spoken by the Chef. From there, it was an easy decision, I called my wife (yes, I told her she was right) and I registered for culinary school that day.
